How to Add Old Notes with Original Dates?

How can I change the date of a note I insert? I'd like to input some old notes I’ve taken over the years and have them time-stamped with the original dates they were created. I don’t want the system to treat them as recently added notes I’d like to preserve the original timeline so I can accurately track progress.
